The career of the « Cheese Factory Tierra de Barros » began the 21st of January of 1999. Mª Cristina Mangas Durán and I, Ernesto Méndez de la Cueva, have taken the decision to resign from our respective jobs and we threw ourselves in this adventure. For us, it was a challenge to achieve our purpose and to offer to our customers exactly the products we would like to do. Ernesto, holder of a Business School Diploma , was Technical Director of the Denomination of Origin "Quesos of Serena" from 1992 to 1999, and Cristina holds a Master's degree in biology; all of which , together with our enthusiasm and our eager to work, make us realize that we were ready to carry out our project, knowing that the day-to-day would bring problems which would need to be faced and solved.

The Cheese Factory is located in Villafranca de los Barros in the heart of the Land of Barros, this region is well known for its good wines as well as for its delicious torts and cheeses made at the Cheese Factory Tierra de Barros. Our milk comes from a single cattle farming in the region. The ewes are fed by traditional methods, which offer health guarantees and promote the maintain of the ecological balance.

Our cheese has been produced by using only artisanal means, without any form of heat treatment and only made with sheep’s raw milk, vegetal rennet also called Hierbacuajo and salt.
